Green Coffee Beans Buying Guide: What Moisture, Screen Size and Q Grade Mean for Your Roast

Most green coffee beans buying decisions start in the wrong place.

A sample arrives, you cup it, the profile is interesting - blueberry, jasmine, clean finish - and the order goes in. Six weeks later the container arrives and the roast behaves nothing like the sample. The body is thinner, the acidity sharper, the moisture uneven. The color in the drum is inconsistent. Something went wrong between the cupping table and the roaster.

That something was almost always a spec that wasn't checked.

Green coffee quality is not fully visible in a cupping session. The moisture content, screen size uniformity, defect count, water activity, and density of your green coffee determine how it will behave in your roaster, how long it will hold quality in storage, whether it carries a food safety risk, and whether your FDA compliance obligations are being met. These are not secondary considerations - they are foundational.

This guide explains every key green coffee specification: what each one means, what the right numbers look like, and what happens when they're wrong. By the end, you'll know exactly what to ask for before placing any green coffee order.

1. Moisture Content: The First Number to Check

Moisture content is the percentage of water in the green coffee bean relative to its total weight. It is the single most important specification for green coffee quality, storage safety, and roast behavior.

The optimal range

The industry-standard optimal range for green coffee moisture is 10.5%–12% (measured by the Specialty Coffee Association / SCA protocol on a wet-weight basis). This range balances several competing requirements:

  • Roast behavior: Coffee within this moisture range absorbs heat predictably in the drum, reaches first crack at expected temperatures, and develops flavour compounds evenly. Moisture drives the early phase of the roast — it's the water evaporating from the bean that creates the yellow/steam phase and sets up the Maillard reactions that follow.

  • Storage safety: Above 13%, green coffee becomes vulnerable to mould growth — particularly Aspergillus species which produce Ochratoxin A (OTA), a mycotoxin regulated by the EU (maximum 10 ppb in roasted coffee) and an active area of FDA scrutiny for FSVP importers.

  • Physical integrity: Below 10%, the bean becomes brittle. Brittle beans crack unevenly during roasting, producing a batch with inconsistent color, uneven extraction, and a flat, underdeveloped flavor profile.

How moisture is measured

Moisture content is measured using a moisture meter- either a capacitance meter (fast, practical, used at farm and mill level) or an oven-drying method (slower, more accurate, used in laboratory analysis). When reviewing a COA or green analysis report, confirm the measurement method. Capacitance meters can read differently across bean densities- a laboratory oven-dry reading is the gold standard for dispute resolution.

  • Moisture reading at time of export (not at time of harvest - moisture changes during drying and resting)

  • Measurement method and equipment used

2. Water Activity (Aw): The Spec Most Buyers Overlook

Water activity (Aw) is related to moisture but measures something different and in many ways more important: the availability of water for microbial activity.

Moisture content tells you how much water is in the bean. Water activity tells you how much of that water is free, available to support the growth of bacteria, yeast, and mould. A coffee can have 11.5% moisture but very low water activity if that water is tightly bound to the bean's cellular structure. Conversely, a coffee with seemingly acceptable moisture can have high water activity if the water is not well-integrated.

The critical threshold

For green coffee, water activity should be below 0.70 Aw. Above this threshold, mould species including Aspergillus can grow and produce OTA. Below 0.70 Aw, the risk drops significantly.

Water activity is measured with a water activity meter (a standard piece of food safety laboratory equipment). Not all green coffee suppliers provide Aw readings as standard but any supplier positioning their product for the US specialty or private label market should be able to provide it on request.

3. Screen Size: Consistency Before Profile

Screen size describes the physical size of the green coffee bean, measured using a series of metal screens with circular holes of standardized diameter. The screen number corresponds to the hole diameter in 64ths of an inch: Screen 15 = 15/64 inch = approximately 5.95mm; Screen 17 = 17/64 inch = approximately 6.75mm; Screen 18 = 18/64 inch = approximately 7.14mm.

The practical significance of screen size is straightforward: beans of uniform size roast more evenly. When bean size varies significantly within a batch, smaller beans heat faster and develop more quickly than larger beans roasted simultaneously producing a batch with inconsistent color, uneven extraction, and a narrower window between underdeveloped and over-roasted.

What screen size tells you about quality

  • Higher screen size ≠ better quality - Larger beans are not inherently higher quality. A well-processed Screen 14 Ethiopian lot can outperform a Screen 18 commercial lot on cup quality. Screen size is about consistency, not superiority.

  • Screen size uniformity matters more than absolute size - A lot graded as Screen 17 should contain predominantly Screen 17 beans. Lots with high variation (e.g., 30% Screen 15, 40% Screen 17, 30% Screen 18) will roast inconsistently regardless of the average size.

  • Peaberry is a special case - Peaberry beans (single, round beans that form when only one seed develops in the cherry) are smaller and rounder than normal beans. They roast faster and more evenly due to their shape. Both Indian and Ethiopian peaberry lots are available through Caffé Premium.

4. Defect Counting: What's Actually in the Bag

A defect count quantifies the number of physical imperfections in a green coffee sample both primary (full) defects and secondary (partial) defects according to the SCA Green Coffee Classification system.

Defects matter because they directly affect cup quality. Some defects introduce off-flavors (sour, phenolic, fermented, moldy). Others affect roast consistency (uneven development, scorching of broken beans). Understanding the defect system helps you evaluate what you're paying for.

The SCA defect system

The standard sample size is 350 grams of green coffee. Defects are classified as:

  • Category 1 (Primary) defects - Each counts as 1 full defect. Includes: full black beans, full sour beans, dried cherries/pods, fungus-damaged beans, foreign matter, and severe insect damage.

  • Category 2 (Secondary) defects - Multiple beans required to count as 1 full defect. Includes: partial black, partial sour, parchment, floaters, immature/unripe beans, withered beans, shells, broken/chipped beans, and hulls/husks.

5. Q Grade: The Third-Party Quality Benchmark

A Q Grade is a standardized quality score assigned to a green coffee lot by a licensed Q Grader - a coffee professional certified by the Coffee Quality Institute (CQI) to evaluate coffee against SCA cupping protocols.

The Q Grade score runs from 0 to 100. The specialty coffee threshold is 80. Here's what the scoring bands mean in practice:

Q Arabica vs Q Robusta

Q Grading was originally developed for Arabica coffee. The Coffee Quality Institute extended the program to Robusta with the Q Robusta protocol - a parallel system that evaluates Robusta on its own merits, using criteria appropriate to the species rather than applying Arabica standards to a fundamentally different bean.

Q Robusta certification is still relatively uncommon, but it is available for Indian Robusta - one of the few Robusta origins where estate-level processing quality makes specialty-grade evaluation meaningful. A Q Robusta score above 80 is a legitimate quality credential and a marketing asset for private label brands positioning on quality.

Q Grade is not permanent

A Q Grade reflects the lot's quality at the time of grading. Coffee stored poorly at high humidity, incorrect temperature, or for too long will lose quality over time. A Q Grade certificate more than 12 months old should be treated as a historical data point, not a current quality guarantee. Always request recent grading dates, and cup current-crop samples before placing large orders.

6. Bean Density: The Hidden Roast Variable

Density describes how tightly packed the cellular structure of the green coffee bean is - a function primarily of growing altitude. High-altitude beans grow more slowly in cooler temperatures, developing denser cell walls and higher concentrations of sugars and aromatic precursors.

Why density matters for roasting

  • Heat absorption: Dense beans absorb heat more slowly than less dense beans. If you charge your roaster at the same temperature for both a high-density Ethiopian and a lower-density commercial Robusta, you'll get dramatically different roast curves.

  • Flavor development: Higher density correlates with more complex flavor development potential. The denser cell structure holds more soluble material which is why high-altitude specialty lots often yield richer, more complex extraction profiles.

  • First crack timing: Dense beans typically hit first crack later than low-density beans at the same drum temperature. Knowing your coffee's density helps you set appropriate charge temperature and development time.

7. Processing Method and Its Impact on Specs

The processing method - how the coffee cherry is transformed from fruit to parchment to green bean has significant spec implications beyond flavor:

  • Washed (wet-processed): Tends to produce more uniform moisture distribution, lower defect counts, and more predictable density. Easier to achieve consistent Grade 1 quality. Moisture typically stabilizes between 10.5–11.5%.

  • Natural (dry-processed): More variable moisture distribution - the extended drying period introduces more opportunity for uneven drying. Higher risk of fermentation defects if drying management is poor. Natural lots require closer moisture and Aw scrutiny. When done well, naturals can be exceptional; when done poorly, defect rates climb significantly.

  • Honey-processed: Intermediate. Partial mucilage retention creates more moisture management complexity than washed but typically less than natural. Trending upward in availability from Ethiopian and Burundi producers.

8. How to Read a Green Coffee COA (Certificate of Analysis)

A Certificate of Analysis (COA) is the primary quality documentation for a green coffee lot. Here's what a complete COA should include, and what to look for:

  • Lot identification: Lot number, crop year, origin, region, processing method, variety (if known). Verify this matches your purchase order exactly.

  • Moisture content: Reading, measurement method, date of measurement. Should be within 10.5–12%. Date should be recent - moisture readings more than 3 months old need re-verification.

  • Water activity: Aw reading and date. Should be <0.70. Not all COAs include this - request it specifically if absent.

  • Screen size: Percentage distribution across screen sizes (e.g., 80% Screen 17+, 15% Screen 16, 5% Screen 15). The distribution tells you more than the headline grade.

  • Defect count: Full defect equivalent per 300g or 350g sample, with breakdown of defect types. Verify against grade claim.

  • Cupping score / Q Grade: Score, grader name and CQI certification number, date of grading. Grader certification can be verified at the CQI registry.

  • OTA test result: Not always included but should be requested for any lot intended for EU export or for buyers with rigorous food safety programs. Result should be <10 ppb.

  • Pesticide residue screening: Increasingly requested by US buyers. Results should comply with EPA tolerance levels.

  • Issuing party: Who produced the COA - the exporter, a third-party lab, or an accredited certification body. Third-party lab COAs carry more weight than self-issued exporter documents.

9. Questions to Ask Your Supplier Before Placing an Order

Use this checklist before committing to any green coffee purchase:

  •   What is the moisture content, and when was it measured?

  •   What is the water activity (Aw) reading?

  •   What is the screen size distribution (not just the headline grade)?

  •   What is the full defect count per 300g or 350g sample?

  •   Is there a Q Grade certificate, and what is the grader's certification number?

  •   What is the crop year? Is this new crop or past crop?

  •   What processing method was used, and at which station or cooperative?

  •   Is the coffee packed in GrainPro or hermetic bags, or standard jute?

  •   What is the OTA test result?

  •   Does the supplier hold an active FDA facility registration and DUNS number?

  •   Can you provide a cupping sample before I confirm the order?
